Installing a Pearl Expert in place of a Sapphire 2000

I've been tasked with replacing the Sapphire 2000 in a local church with a new Pearl Expert. Most of the old programming is pretty basic, but there are three submasters that have fairly precise looks set for TV lighting that they want to copy over to the new console as unchanged as possible. No movers, only conventional lights for now. I've heard that there's no file conversion between the old shows and the Titan OS, and I'm pretty OK with that since I'd rather start with a clean slate, but it would be nice to figure out a way to get just these TV subs transferred. I was thinking that the simplest approach, though fairly time consuming, would be to record the channel outputs manually onto paper/spreadsheet from the Sapphire 2k, and then enter that data manually. About 300+ dimmers, times 3 submasters (though probably many zeros), so not a trivial matter, but that just offends my technological sensibilities. Anybody else have any suggestions?

Unfortunately I can't think of any better way. Maybe there's something that could capture the DMX and help with recording the channel values but not sure what. Pen and paper is probably inevitable.
