1. The way to do this at the moment is to include the cue and re-record it:
in unfold, press 'include', then playback swop of the cue you want to copy. You can then re-record this as a new step.
2. Not sure what you want to record "live", do you mean timing?

I'm not sure if it's quite what you want but I do have a possible two-part solution:
First setup a cue-list with autoload playbacks in the correct order. Then set the timing live.
To setup the cue-list:
-Record Cue-List
-[Advanced Options]
-Turn on [Autoload Live Playbacks]
-Lift playbacks that you want to fire in the first cue.
-Store cue
-Lift playbacks for second cue.
-Store cue.
-etc.
Once you have build the list you can set the timecode points in real-time:
-Fire Cue-List and make sure is connected.
-[Timecode]
-Set timer source (ie. Winamp)
-[Record]
-Start the source time
-Press Go to set the timecode point for each cue in turn.
-Finish recording by pressing [Record] again.
-[Connected Cue-Lists]/turn on the list(s) to be controlled by timecode (this can be done by toggling the softkeys or by selecting the playbacks themselves.
-Reset the source timer and test.
-Manually edit times as required.
If you want the first cue to fire immediately then after pressing [Record] you could fire the first cue while the timer is paused which should ensure it is recorded at 0sec then begin the source timer and continue real-time settings from cue 2.
